Zazzicchia Prossedana (Sausage of Prossedi)
The zazzicchia prossedana is a specialty of Prossedi.
This is a sausage made from meat that is strictly hand-cut and seasoned with grated orange peels and pitartara (coriander seeds), a prized spice grown in our countryside. The minced meat is left overnight to absorb the flavour, the sausage is stuffed the next day and dried for 3-4 days.
You can find these sausages in local butcher shops or you can enjoy them at the festival dedicated to them in December, at the height of the Christmas atmosphere, in the town of Prossedi.
It goes perfectly with local broccoletti, but also with polenta or a simple slice of toasted bread.
A unique delicacy.
