Ventotenese-style lentil soup
Ventotenese lentil soup is a typical speciality of the Ventotene cuisine. It is a warm, hearty and mouth-watering dish prepared with the prince of Ventotene's typical products: lentils, rich in iron thanks to the volcanic origin of the soil. Simple and quick to make.
Ventotene lentils, Ventotene cherry tomatoes, garlic, basil, celery and chillies
Do not soak the Ventotene lentils, they do not need it. Boil them in water together with all the ingredients for about 60 minutes.
To obtain soft lentils, add extra virgin olive oil and salt about 10 minutes before the end of cooking.
Once ready, add chilli pepper to taste.
