Sabina extra virgin olive oil PDO
Olives intended for the production of Sabina DOP extra virgin olive oil must be produced in the territory of Sabina; this includes Guidonia di Montecelio. The olives used in making the oil are obtained from: Carboncella, Leccino, Raja, Pendolino, Frantoio, Moraiolo, Olivastrone, Salviana, Olivago and Rosciola varieties which make up at least 75% of the groves, individually or mixed. Olives of other varieties present in the olive groves can also be used up to a maximum of 25%.
The origins of this oil date back more than two thousand years. The oldest olive tree in Europe grows here in Sabina.
The oil produced is yellow-green in colour with golden hues. It has a fruity and velvety flavour that is homogeneous, sweet and aromatic, or bitter and piquant in freshly pressed oils.
Excellent when used raw and as a condiment for vegetable, fish and white meat dishes.
