‘A Palomella (Easter Cake)

‘A Palomella is a traditional Easter cake of Guidonia Montecelio.

It has the appearance of a female figure carrying an egg on her belly, symbol of fertility and renewal. That is why in the past it was given to girls. Today, it is considered a nice dessert to garnish the Easter table, but also good for the palate. The recipe is very easy.

 

Ingredients

Flour, eggs, sugar, water

 

Preparation

Make a well in the flour on a wooden board, add the other ingredients and knead until the dough is smooth and elastic.

Let the dough rest for about 30 minutes.

Then shape it into a female figure with an egg on her lap.

Finally brush the cake with a little bit of egg white.

Bake at 180°C until golden brown.
