The Crespelle (Crepes) of Maenza
The Crespelle (Crepes) are a traditional Maenza confectionery product: a dough in the shape of sticks which are fried and then sprinkled with sugar.
They are a true delight for the senses that you can enjoy in Maenza for New Year.
They are so delicious that you will want to enjoy them at other times of the year as well. So here is the recipe for making them at home.
Ingredients
Flour, sourdough and brewer's yeast, water, lemon grated and in juice, raisins, milk, sambuca, almonds, pine nuts, water, vanilla, cinnamon, salt, extra virgin olive oil and sugar.
Preparation
Dissolve the yeast in warm water.
Place all the ingredients in the mixer adding the water with the previously dissolved yeast.
Knead for about 10 minutes.
Let the dough rise for a couple of hours covered with a cloth.
When the rising is finished, knead the dough into the shape of sticks.
Heat the extra virgin olive oil and once it comes to temperature, pour and spread the crespelle, removing them as soon as they turn golden brown.
Finally, sprinkle them with plenty of sugar.
Savour them along with a cup of hot chocolate or tea: your taste buds will thank you.
