The Crespelle (Crepes) of Maenza
The Crespelle are traditional fried crepes sprinkled with sugar from Maenza.
They are shaped like sticks and are also known as the "New Year's pancakes", because the people of Maenza prepare them to celebrate the arrival of the New Year.
The recipe can be traced back to the 18th century and is based on flour, natural yeast and brewer's yeast, lemon grated and in juice, raisins, milk, sambuca, almonds, pine nuts, water, vanilla, cinnamon and salt.
