Cianfotta (vegetable stew)
Cianfotta is a poor man's dish typical of Ventotene, easy to make and really tasty. A surprising vegetable stew made with seasonal vegetables from the island's countryside, it traditionally accompanied dishes such as quail and other small birds.
Asparagus, artichokes, peas, broad beans, wild leek, celery and bacon
Heat extra virgin olive oil and brown the wild leek, chopped celery and bacon over a low heat.
Then add all the chopped vegetables and fry for 4 minutes.
Finally add a litre of water, salt and cook for about 30 minutes.
Each spoonful gives you the pleasure of flavours from the past.
