Caciatella of Maenza

Have you been to Maenza and tried Caciatella, the traditional Easter pastry? It is so good that it's hard to wait until Easter. So prepare it whenever you feel like it. Here is the recipe.

 

Ingredients

Flour, eggs, sugar, extra virgin olive oil, water, salt, ricotta, sambuca and cinnamon

 

Preparation

Dissolve the salt in the water.

Put the flour, eggs, sugar, oil into the mixer and add the water with the previously dissolved salt.

Knead the pastry for about 10 minutes and then leave it to rest in the fridge.

Spread it out by hand, lining a round baking pan of approximately 25 cm.

Prepare a filling mixture of ricotta, sugar, whole eggs, sambuca and cinnamon and fill the pan.

Close with strips of puff pastry, like a tart.

Finally bake it in the oven at 280°C for 30 minutes.
