Buffalo ricotta cheese from Campania PDO

Buffalo ricotta cheese from Campania PDO, just like Buffalo mozzarella from Campania PDO, is also produced in some areas of Lazio, including Aprilia, Latina, Maenza, Pontinia, Priverno, Prossedi, Sabaudia, San Felice Circeo, as well as in Campania. There where the orographic and pedoclimatic characteristics of the territories have favoured the spread of buffalo breeding for several centuries now.

It is a dairy product which is made by heating the "first whey" or "sweet whey" derived from the processing of buffalo milk, featuring a high water content.

It has a truncated cone shape and looks almost like porcelain. Its weight can arrive up to 2 ounces.

It is rindless and the curd has a soft, grainy texture.

The flavour is unique, fresh, mild and sweet and has a milky and creamy scent.

It is delicious to eat on its own but you can also use it as a fine ingredient to prepare some tasty recipes, such as cannelloni.
